For noodles, look for Pad Mee Korat or a Korat-style stir-fried rice noodle, typically cooked with a chili-garlic paste, fish sauce and a touch of palm sugar, then tossed with pork or chicken and crunchy vegetables. It’s naturally spicier and drier than Pad Thai, and it does not rely on dried shrimp or peanuts. Spice levels are adjustable, so say “mai phet” if you prefer mild.
